Happy New Year! First, check out the work bench Robert made Reed in the garage! So cool!

I don’t know if it was turning 32 in 2015 that really did it or what, but man, have I gained a lot of weight! 😦  All of 2016 I gradually gained more weight…It’s like my body said, “Okay, you’ve crossed that part in a woman’s life when your metabolism gives you the middle finger!” Geesh.

But I have noticed, as I’m getting older I am also feeling more comfortable in my own skin, feeling more confident in the woman I am.

I guess I just need to reintroduce myself to exercise and restraint, huh? Restraining from wine and late night snacks? Sounds terrifying.

One big issue at our house for the past year has been bedtime – Ugh. So brutal.

Okay, so here it is: Reed is taking meds that help a TON in class during the day – I mean, life changing. His reading and behavior have been worlds better. One problem is that he doesn’t eat much at all most the day, after breakfast. Then, come evening, it’s a struggle to get dinner down his hatch.

After dinner, he takes a bath and then I usually let him do a few things on the iPad first – I know a lot of parents may say that it’s not good, but being so ADHD he needs that unwind-time before we unwind with books.

After books and our goodnight song, it’s then an hour process to assure him what different noises are etc.

Once I’m in the living room, he then says, “goodnight mom” a zillion times, and there is no end! It honestly takes the life out of me and by the time it’s done I’m basically screaming at him and then everyone is frustrated. It’s such a sad way to go to sleep, not to mention tiring, and then it causes issues between Robert and I. Issues that are solely due to the tension at bedtime.

I actually just realized, right this second, as I write this, writing this just helped a little! Venting. Knowing that there are people at the other end of this who can help…  You guys always give me the best, most loving and appreciated advice. I can never thank you all enough.

NOW, Onto a lighter note, lighter note in two ways, lighter on your mind and waistline!  🙂

I discovered this as an experiment and I’m calling it Black Bean Veggie Blender Soup.

Now, I don’t measure things out very much, so go with your taste buds. It’s the best way to become a good cook. Taste as you go!

Black Bean Veggie Blender Soup
In a Cuisinart (Christmas gift from Robert!) throw in 2-3 cans of drained black beans, a can of stock ( i used chicken but veg or beef would be good too), a chopped carrot, quarter onion, chopped zucchini, a handful of mushrooms, a handful of kale or spinach (throw in any raw veggies you want!)  Blend it until it’s pureed.

Pour into a pot.

Let simmer and as that’s happening start adding spices.

Give-or-take 1 tablespoon of cumin and chili powder, a lil bit of garlic powder, hot sauce, a spoonful of lite sour cream or cream cheese, lime juice and, of course, salt and pepper.

Just keep tasting it until it’s good to you. That’s it!

I make a ton because it’s very filling and a great lunch that is SO GOOD FOR YOU! Protein and lots of raw veggies! I also add a diced avocado and a corn tortilla torn up when I eat it. Let me know if you try it!

  1. HI Emma! I didn’t know you were writing a blog, i will follow! Love your post, miss you and I am going to make the soup this weekend, sounds so good! I stopped nursing last month and BAM 7 extra pounds just appeared! So I feel ya girl, lets get together soon, take our babies on a hike or something active, love you!
